Perfect Crepe Batter: No Lumps, No Pointless Resting
Crepe batter has a reputation for being simple. It is, as long as you know the order to add the ingredients. Here is why it gets lumpy, and how to avoid it.
Method
Sauce split, roast going wrong? Kitchen SOS tells you why and how to save it (Pro plan).
- Put the flour and salt in a large bowl. Make a well in the center.
- Add the eggs to the well. Start mixing, drawing in the flour from the inside out. You want a thick, uniform batter first, without adding any milk. This step is what prevents lumps: when you add the milk right away, the flour forms clumps the liquid can no longer get into.
- Once the batter is thick and smooth, whisk in the milk gradually. Add 100 mL (scant 1/2 cup) first, mix until smooth, then pour in the rest in a thin stream. The finished batter should be fluid and slightly creamy.
- Add the cooled melted butter, the sugar and the flavoring you chose. Mix.
- Rest 30 minutes minimum at room temperature (or 1 hour in the fridge). The developed gluten relaxes, the air bubbles rise, the batter evens out. This rest makes the crepes more supple and less likely to tear.
- Heat a crepe pan (24 to 26 cm, about 10 inches) over medium-high heat. Butter lightly.
- Pour in a small ladle of batter (about 1/4 cup / 60 mL), immediately tilting the pan in a circle to spread it thin. The batter should cover the bottom without excess.
- Cook 45 to 60 seconds until the edges lift and the surface is dry. Flip. 30 seconds on the other side. The first crepe almost always fails. It is the one that greases the pan and calibrates the temperature.
- Stack the crepes as you go. They keep stacked and covered for 48 hours in the refrigerator.
Batter that is too thick gives crepes like pancakes. Too thin, and they tear. If it seems too thick after resting, add milk a spoonful at a time. For Breton galettes: replace 200 g (1 2/3 cups) of the all-purpose flour with 200 g buckwheat flour, and use only water or half water, half milk.
