Method
Sauce split, roast going wrong? Kitchen SOS tells you why and how to save it (Pro plan).
- Cut the cauliflower into florets and cook them 10 minutes in salted boiling water. Drain well.
- Meanwhile, melt the butter in a saucepan, add the flour, and stir 1 minute.
- Pour in the milk a little at a time, whisking to avoid lumps, until thickened.
- Off the heat, add half the cheese, the nutmeg, salt, and pepper.
- Arrange the cauliflower in a baking dish, cover with the sauce, and sprinkle with the rest of the cheese and a little breadcrumbs.
- Bake 30 minutes at 400°F (200°C), until the top is well browned.
Go by taste and by eye for the cooking: ovens rarely heat the same way. The top should be golden, not pale.
