Ratatouille the Nice Way: Each Vegetable Cooked Separately

The ratatouille most people eat is a vegetable soup. The real Niçoise method cooks each vegetable separately to keep its texture and flavor, then combines them at the end. It takes longer, and it is nothing like the usual version.

Sauce split, roast going wrong? Kitchen SOS tells you why and how to save it (Pro plan).

  1. Cut all the vegetables into roughly 3/4 inch (2 cm) cubes. Keep each vegetable in its own bowl.
  2. Lightly salt the zucchini and eggplant cubes and set them in a colander for 20 minutes to draw out the water. Pat them dry with paper towels before cooking. A wet vegetable steams instead of browning.
  3. In a large skillet, heat 2 tbsp oil over high heat. Sauté the eggplant cubes in small batches until golden, 5 to 7 minutes. Salt, then set aside in a Dutch oven.
  4. Same thing with the zucchini: 2 tbsp oil, high heat, 3 to 4 minutes. Set aside separately.
  5. Sauté the diced peppers in 2 tbsp oil, 8 minutes over medium-high heat until tender and lightly caramelized. Set aside.
  6. Cook the sliced onions in the same skillet with 2 tbsp oil, 10 minutes over low heat. Add the chopped garlic, cook 2 minutes.
  7. Add the roughly chopped tomatoes, the bouquet garni, salt and pepper. Reduce 15 minutes over medium heat until you have a thick, concentrated sauce.
  8. Gently fold the cooked vegetables into the Dutch oven with the tomato sauce, one at a time. Mix carefully so nothing gets crushed. Taste and adjust the seasoning.
  9. Simmer 10 minutes over very low heat, uncovered. The ratatouille should be glossy and fragrant, not liquid.
  10. Serve warm or cold with torn fresh basil. Even better the next day, gently reheated.
Cook's tip

Do not skip the step of drying the zucchini and eggplant. It is what separates a ratatouille that holds its shape from a soft vegetable soup.
