Carbonara Without Cream, the Roman Way
Four ingredients, no cream, no onion, no garlic. A real carbonara is an emulsion of eggs and cheese that the heat of the pasta barely cooks. Delicate and just right.

- Mix the yolks, the whole egg, and the grated Pecorino in a bowl. Add plenty of pepper. The texture should be thick, like pastry cream. Set aside off the heat.
- Cook the guanciale, cut into 1/4 inch (5 mm) strips, in a cold skillet over medium heat. The fat renders gradually and leaves the guanciale golden and crisp in 6 to 8 minutes. Turn off the heat and let it cool slightly in the pan.
- Cook the pasta in a large pot of salted water (10 g of salt per liter), taking it out 2 minutes before the time on the package.
- Before draining, scoop out 3/4 cup + 2 tbsp (200 ml) of the cooking water and set aside.
- Drain the pasta and put it straight into the skillet with the guanciale (heat off). Toss to coat the pasta in the fat.
- Pour the egg and cheese mixture over the pasta. Add 3 tbsp of cooking water and toss quickly with tongs or a fork. The goal is to cook the eggs with the residual heat of the pasta, not with the burner: above all, do not turn the stove back on.
- Add the cooking water a spoonful at a time until you get the texture you want. The sauce should coat each piece of pasta without pooling at the bottom of the plate.
- Serve immediately with a few turns of the pepper mill and a little extra Pecorino.
If the sauce sets into an omelette, the heat was too high. It can be rescued: add a big spoonful of cold cooking water and stir off the heat. Next time, wait 30 seconds after turning off the heat before adding the eggs.
