How to Organize Your Kitchen to Actually Cook Faster
Time lost in the kitchen isn't the cooking. It's hunting for the colander, moving three boxes to reach the oil, washing the knife you should have washed.
In restaurants, there's a term for this: mise en place. Before service, everything is ready, everything is in its place, every move is four inches (10 cm) from the hand. At home we do the opposite: we start cooking, then we start searching. That's where the time goes, and nowhere else.
The three-zone principle
Split your kitchen into three: the cold zone (the fridge, where you store), the prep zone (the countertop, where you cut) and the hot zone (the stove). The path should run in that direction, with no back and forth. If your cutting board is at the other end of the room from the fridge, you're walking for nothing a hundred times a week.
What should be within reach
The tools you grab every day should never be stored at the back of a drawer. Chef's knife, cutting board, spatula, salt, oil, pepper: in plain sight, grabbable without thinking. A utensil crock near the stove beats a perfectly organized drawer you open twenty times.
On the other hand, the raclette machine and the charlotte mold: way up high, out of the way. You store by frequency of use, not by size or looks.
Cleaning as you go
In a professional kitchen, they rinse and wipe as they work. The counter stays clear, and you never end up with a mountain of dishes at the end. Make it a habit: while something simmers, wash the board and the knife. By the time the dish is ready, almost nothing is left. It sounds trivial, but it changes the evening chore.
A few investments that save time
A good, sharp chef's knife cuts twice as fast and tires your hand less. A board big enough that you don't have to empty it constantly. A few bowls for prepping ahead, mise en place style. And a lid organizer, because digging for the right lid in a collapsing pile is the most needlessly avoidable time waster in the whole kitchen.
None of these ideas is revolutionary. Put together, they turn a painful hour into thirty smooth minutes. Cooking goes faster when you stop searching.
